Fennel
Fennel, both a herb and a vegetable, is a versatile plant known for its aromatic and flavourful characteristics, with various parts used in cooking. Fennel features a rounded base, often white or pale green, with overlapping layers. The bulb has a mild, sweet anise-like flavour and a crisp texture. Above the bulb, fennel develops long, slender, green stalks that resemble celery but have a distinct licorice-like aroma and flavour. The feathery, delicate leaves grow from the stalks and are sometimes referred to as fennel fronds. They have a milder version of the bulb’s flavour. The bulb is typically harvested when it reaches a usable size. Leaves and stalks can be harvested as needed.
