Garden rocket, also known as Eruca sativa, is a leafy green herb widely appreciated for its peppery, slightly bitter flavour and delicate leaves. It thrives in moist, well-drained soil with full sun. Leaves can be harvested when they reach a desirable size, typically before the plant bolts (produces flowers) to maintain tenderness and avoid excessive bitterness.
